Day 14 – Malteser Cupcakes

We loved the cupcake recipe so much we decided to change it up a little and use Maltesers instead of chocolate chips – it was so worth it. These cupcakes were delicious πŸ™‚

Ingredients

125g Caster Sugar

150g Butter

175g Self raising flour

2 Eggs

4 tablespoons of water

121g of Maltesers (Big Bag)

 

Preheat oven to 180 C/ 350 F

Line cupcake tin with cupcake cases (makes 12 cupcakes)

Beat the butter and caster sugar until light in colour

Add eggs, flour & water and beat well

Add the maltesers and mix well

Divide the mixture between the cupcake cases

Bake for 20 mins or until the cupcakes have risen and spring back when you gently push down on them

Allow the cupcakes to cool on a wire rack

Day 13 – Smoothies

We love our smoothies πŸ™‚

Ingredients

Strawberries

Blueberries

Oranges

Grapes

Spinach

Wheatgrass powder

 

I don’t weigh the amounts I just use a bit of everything I have in the house and pop it all in the Nutribullet

We serve our smoothies with an ice cube or two

Day 12 – Lasagne

So we decided to make Lasagne today and it was delicious. It was so yummy it was all gone before I could get a picture of it cooked so I have added the picture before I put it in the oven πŸ˜€

Ingredients

450g – 500g of Mince Beef

500 ml of Lasagne white sauce

500 ml of Lasagne tomato sauce

Lasagne sheets

 

Fry the mince and once brown add the Lasagne tomate sauce and cook for 5 – 10 mins on a low heat

Preheat the oven to 180 C

Depending on the size of the dish, I soak the lasagnes sheets in boiling water for 50 seconds and then remove them from the boiling water

Place a third of the meat mixture into a casserole dish, cover with lasagne sheets and then cover with a third of the white sauce (I get the ready made sauce but we will try to make it from scratch next time and let you know how it goes πŸ™‚ )

Repeat step above two more times

Finishing with the white sauce – you can also top with cheese (my daughter doesn’t like cheese on it so we didn’t add it)

Put in the oven for 20 – 25 minutes

Day 11 – Double Chocolate Chip Cupcakes

These cupcakes are so easy to make.

Ingredients

2 tablespoons of drinking chocolate

4 tablespoons of water

150g of chocolcate chips

 

Preheat oven to 180 C/ 350 F

Line cupcake tin with 12 cupcake cases

Beat the butter and caster sugar until light in colour

Add eggs, flour, drinking chocolate & water and beat well

Add the chocolcate chips and mix well

Divide the mixture between the cupcake cases

Bake for 20 mins or until the cupcakes have risen and spring back when you gently push down on them

Allow the cupcakes to cool on a wire rack

Day 10 – Shepherd’s Pie

So today we decided to make a shepherd’s pie together instead of baking πŸ™‚

Ingredients

1 teaspoon of Olive oil

450g Mince Beef

2 Carrots

1 Onion

400 – 450g of mashed Potatoes

Shepherds Pie Package

 

Place the oil in a saucepan and add the meat, diced carrots and onion and cook for around 5 minutes

Blend the Shepherds pie package (didn’t make the sauce myself but the packages are delicious in it) with the recommended amount of water, mine was 300ml of cold water and add it to the saucepan. Cover and cook for 20mins

Preheat the oven to 190 C

Place the mixture from the saucepan into the casserole dish and top it with mashed potatoes. I add a little butter to top before putting the lines in it with the fork – we love lots of butter in our potatoes πŸ˜€

Cook in the oven for about 20 minutes

Day 9 – Chocolate Chip Cupcakes

Day 8 – Porridge Bread

We decided to make something new – porridge bread Β and we are so glad we did because it was delicious and so easy to make πŸ™‚

Ingredients

500ml Natural Yogurt

2 x 500g container of Porridge Oats (wash out the yogurt container)

2 teaspoons of Bread Soda

2 tablespoons of Olive Oil

Cinnamon & handful mixed seeds optional

 

Preheat the oven to 175 C and grease the tin

Mix all ingredients in a bowl

Place in the baking tin and bake for 30 minutes and then take it out of the tin and put back in the oven upside down and bake for a further 15 – 20 minutes

Other options to add to the mixture is sultanas, chopped apricot, dried cranberries, cashew nuts etc

 

Day 7 – Cupcakes

These cupcakes are delicious and simple to make πŸ™‚

The cupcakes were so yummy my daughter couldn’t wait for me to take the picture of the last one before she took it off the plate πŸ˜€

150g Butter

175g Self raising flour

2 Eggs

3 tablespoons of water

1 teaspoon Vanilla Essence

Chocolate & Marshmallows to decorate

 

Preheat oven to 180 C/ 350 F

Line cupcake tin with cupcake cases (makes 12 cupcakes)

Beat the butter and caster sugar until light in colour

Add eggs, flour, water & vanilla essences and beat well

Divide the mixture between the cupcake cases

Bake for 20 mins or until the cupcakes have risen and spring back when you gently push down on them

Allow the cupcakes to cool on a wire rack

Melt milk chocolate and cover cupcakes with melted chocolate and assemble marshmallows before chocolate hardens
